- tomato, diced1 lb
- corn1 can
- canned chipotle peppers in adobo3/8 oz
- shredded monterey jack cheese2 oz
- cooking oil2 tbsp
- garlic (minced)1
Instructions
- 1Cook the rice according to the package directions while preparing the skillet.
- 2Heat the oil in a skillet over medium-high heat. Add the chicken and cook until browned. It is done when the thickest part reads 165°F (74°C) on an instant-read thermometer.
- 3Stir in the garlic, diced tomato, corn, and chipotle pepper. Cook until the tomato softens and the mixture is hot.
- 4Fold in the cooked rice and warm everything together. Sprinkle with Monterey Jack, cover briefly, and let the cheese melt before serving.
