- hominy, drained2 can
- canned black beans, rinsed1 can
- crushed tomatoes1 can
- chicken broth2 cup
- white rice1/2 cup
- tomato, diced1/2 cup
- garlic, minced1
- canned chipotle peppers in adobo1 tbsp
- cooking oil4 tsp
Instructions
- 1Cook the rice according to the package directions and set it aside.
- 2Warm the oil in a large pot, add the chicken, and cook until lightly browned on the outside.
- 3Add the garlic, crushed tomatoes, broth, hominy, black beans, diced tomato, and chipotle pepper.
- 4Bring to a gentle simmer, cover, and cook until the chicken is fully cooked and the stew has thickened.
- 5Serve the stew over the rice.
