- long-grain white rice1 cup
- frozen corn8 oz
- limejuiced1
- fresh cilantrochopped1/2
- chili powder2 tsp
- ground cumin1 tsp
- canola oil8 tsp
- kosher salt1 tsp
- black pepper1/2 tsp
Instructions
- 1Rinse the rice if desired. Pat the chicken dry without rinsing it, then season both sides with the salt, pepper, chili powder, and cumin. Wash the board, knife, and hands with soap and water before touching anything else.
- 2Cook the rice according to its package directions, stirring in the corn during the final 3-4 minutes, until the rice is tender and the corn is hot.
- 3Heat the oil in a skillet over medium-high heat. Sear the chicken for 5-7 minutes per side, until browned and the thickest part reaches 165°F (74°C). Transfer it to a clean plate.
- 4Stir lime juice and cilantro into the rice. Taste and adjust the seasoning, then serve with the chicken.
