  • white fish filletpatted dry24 oz
  • long-grain white rice1 5/8 cup
  • cabbagethinly sliced20 oz
  • light coconut milk2 cup
  • red onionthinly sliced5/8
  • garlicminced2
  • fresh gingerfinely grated1 oz
  • lime juice4 tbsp
  • vegetable oil4 tbsp
  • cumin1 tsp
  • kosher salt1 tsp
  • black pepper1/2 tsp

Instructions

  1. Thinly slice the cabbage and red onion, mince the garlic, and finely grate the ginger. Do not rinse the fish. Wash the board, knife, and hands with soap and water after handling the raw fish before touching anything else.
  2. Rinse the rice. Add it to a saucepan with water according to the package directions and season the water with kosher salt. Bring to a boil, cover, and reduce the heat to low. Cook for 15-18 minutes, until tender and the liquid is absorbed. Remove from the heat and let it stand covered for 5 minutes, until fluffy.
  3. Pat the fish dry and season both sides with kosher salt, black pepper, and cumin. Heat half of the vegetable oil in a large skillet over medium heat. Cook the fish for 3-4 minutes per side, until it flakes easily and reaches 145F (63C) at the thickest part. Transfer it to a clean plate.
  4. Add the remaining vegetable oil to the skillet. Add the red onion and cabbage with a pinch of kosher salt. Cook for 5-7 minutes, stirring, until the cabbage is tender-crisp and lightly browned.
  5. Add the garlic and ginger and cook for 30-60 seconds, until fragrant. Pour in the coconut milk and lime juice. Simmer for 3-4 minutes, until the sauce gently thickens and coats the vegetables. Taste and adjust with kosher salt and black pepper.
  6. Spoon the rice into bowls, top with the cabbage and coconut sauce, and place the fish over it. Serve immediately.
