Instructions

  1. 1Place chicken, canned tomatoes, diced onion, garlic, olive oil and spices into the crockpot and toss to combine.
  2. 2Cook on low until chicken is very tender and shreds easily, then shred with two forks inside the pot and stir to coat with sauce.
  3. 3Taste and adjust salt and spices, squeeze lime over the shredded chicken.
  4. 4Spoon the shredded chicken into lettuce leaves and serve warm as cups.
