For 4 servings · 40 min total
- tilapia filletpatted dry1 1/2 lb
- yukon gold potatocut into 1-inch pieces2 lb
- zucchinicut into half-moons1 lb
- broccoli florets12 oz
- garlicminced2 clove
- grated parmesan2 oz
- lemon juice4 tbsp
- extra-virgin olive oil4 tbsp
- kosher salt1/2 tsp
- black pepper1/2 tsp
- dried oregano1/2 tsp
Instructions
- Preheat the oven to 425F. Cut the potatoes and zucchini, mince the garlic, and pat the tilapia dry. Do not rinse the fish. Season the tilapia on both sides with kosher salt, black pepper, and dried oregano.
- Toss the potatoes with half of the extra-virgin olive oil, a pinch of kosher salt, and black pepper on a sheet pan. Roast for 15-17 minutes, until the edges are golden and the centers are nearly fork-tender.
- Add the zucchini and broccoli florets to the pan. Toss the vegetables with the remaining extra-virgin olive oil, garlic, and a pinch of kosher salt. Push the vegetables aside and place the seasoned tilapia on the pan. Wash the board, knife, and hands with soap and water before touching anything else.
- Roast for 8-10 minutes, until the vegetables are browned and crisp-tender and the tilapia flakes easily with a fork and reaches 145°F (63°C).
- Sprinkle the grated parmesan over the vegetables and return the pan to the oven for 1-2 minutes, until the cheese melts and the vegetables are fragrant. Finish the tilapia with lemon juice and taste the vegetables, adjusting with kosher salt and black pepper.
- Serve the tilapia with the roasted potatoes, zucchini, and broccoli.
