- chicken breast (cooked, sliced)16 oz
- whole-wheat tortilla4
- canned black beans (rinsed)2 cup
- shredded cheddar4 oz
- salsa (store-bought or homemade)8 tbsp
- olive oil4 tsp
- lime (optional, for serving)1
Instructions
- 1Heat a nonstick skillet over medium heat and add the olive oil.
- 2Season the sliced cooked chicken lightly with salt and pepper and warm it briefly in the skillet until heated through.
- 3On one half of the tortilla layer the warmed chicken, black beans, and shredded cheddar; fold the tortilla over to make a half-moon.
- 4Cook the folded tortilla in the skillet for a few minutes per side until the tortilla is golden and the cheese has melted, pressing gently with a spatula.
- 5Slide the quesadilla onto a cutting board, let rest a minute, then slice into wedges and serve with salsa and a squeeze of lime if using.
