- baby spinach4 cup

- plain yogurt8 tbsp
- feta cheesecrumbled3 oz
- lemon juice4 tsp
- garlicminced1 clove
- dried oregano1 tsp
- olive oil2 tbsp
- kosher salt1 tsp
- black pepper1/2 tsp
Instructions
- Thinly slice the zucchini and chicken breast, and mince the garlic.
- Do not rinse the chicken. Pat it dry, season it with the kosher salt, black pepper, and oregano, and set it aside. Wash the board, knife, and your hands with soap and water before touching anything else.
- Stir the yogurt, lemon juice, garlic, and a pinch of kosher salt together in a small bowl.
- Warm the olive oil in a skillet over medium heat. Add the chicken in a single layer and cook for 5-7 minutes, turning once, until firm and the thickest piece reads 165°F (74°C). Transfer it to a clean plate. Wash the board, knife, and your hands with soap and water before touching anything else.
- Cook the zucchini in the same skillet for 3-4 minutes, until lightly golden and crisp-tender. Add the spinach and stir for 1-2 minutes, until wilted. Taste and adjust with kosher salt and black pepper.
- Warm the tortillas in the skillet for 20-30 seconds per side, until flexible. Spread with the yogurt sauce, fill with the chicken and vegetables, and top with feta. Finish with a small squeeze of lemon juice.
