- potatoescut into 1-inch pieces2 lb
- broccolicut into florets3 cup
- onioncut into wedges1
- garlicminced4 clove
- lemonjuiced1
- olive oil4 tbsp
- kosher salt1 tsp
- black pepper1/2 tsp
Instructions
- 1Heat the oven to 425F. Cut the potatoes into 1-inch pieces, cut the broccoli into florets, cut the onion into wedges, and mince the garlic.
- 2Do not rinse the chicken. Pat it dry, then season both sides with kosher salt and black pepper. Wash the board, knife, and your hands with soap and water before touching anything else.
- 3Toss the potatoes and onion with half the olive oil, garlic, a pinch of kosher salt, and black pepper on a sheet pan. Roast for 18-20 minutes, until the potatoes are beginning to turn golden and are nearly fork-tender.
- 4Add the broccoli and chicken to the pan, rubbing the remaining olive oil over the broccoli and chicken. Roast for 15-18 minutes, until the broccoli is crisp-tender and the thickest part of the chicken reads 165°F (74°C) on an instant-read thermometer.
- 5Squeeze the lemon over the chicken and vegetables, taste, and adjust the seasoning. Serve the chicken with the roasted potatoes, broccoli, and onion.
