  • chicken thighspatted dry1 1/2 lb
  • orzo1 1/2 cup
  • frozen green beans12 oz
  • yellow onionfinely diced1/2
  • garlicminced2 clove
  • lemonzested and juiced1
  • chicken broth2 cup
  • canola oil4 tsp
  • dried oregano2 tsp
  • kosher salt1 tsp
  • black pepper1/2 tsp

Instructions

  1. Finely dice the onion, mince the garlic, and zest and juice the lemon. Heat the oven to 425F.
  2. Do not rinse the chicken thighs. Pat them dry, then season both sides with the kosher salt, black pepper, oregano, and lemon zest. Wash the board, knife, and your hands with soap and water before touching anything else.
  3. Heat the canola oil in an oven-safe skillet over medium-high heat. Sear the chicken skin-side down, if skin is present, for 4-5 minutes until deeply golden and it releases from the pan. Turn and sear for 2-3 minutes until lightly browned, then transfer the chicken to a plate.
  4. Add the onion and garlic to the skillet and cook for 2-3 minutes until translucent and fragrant. Stir in the orzo and cook for 1-2 minutes until lightly toasted.
  5. Pour in the chicken broth and lemon juice, scraping up browned bits. Stir in the frozen green beans, then nestle the chicken on top.
  6. Bake for 20-25 minutes until the orzo is tender with a firm center, the green beans are crisp-tender, and the thickest part of each thigh reads 165F (74C) on an instant-read thermometer. Let the skillet stand for 3-5 minutes, then taste the orzo and adjust with salt and pepper.
