- grilled chicken breast, sliced20 oz
- whole wheat pita4
- plain Greek yogurt (2% fat)1 cup
- cucumber, diced2 cup
- cherry tomatoes, halved2 cup
- mixed salad greens4 cup
- crumbled feta2 oz
- olive oil4 tbsp
- lemon juice4 tbsp
- garlic, minced2 clove
- salt & black pepper1 1/4 tsp
Instructions
- 1Make the quick tzatziki by stirring the Greek yogurt with minced garlic, half the lemon juice, a pinch of salt and pepper, then fold in half the diced cucumber.
- 2Toss remaining cucumber and cherry tomatoes with the mixed greens, remaining lemon juice, olive oil and a pinch of salt and pepper to make the salad.
- 3Warm the pita briefly if desired, slice open and spread the tzatziki inside, layer sliced grilled chicken and top with the salad and crumbled feta.
- 4Serve immediately; save any extra tzatziki refrigerated for up to 3 days.
