- tilapia filletpatted dry20 oz
- russet potatodiced16 oz
- flour tortilla>8
- green cabbagethinly sliced8 oz
- salsa verde>8 tbsp
- olive oil>6 tsp
- kosher salt>1 tsp
- black pepper>1/2 tsp
Instructions
- 1Dice the potatoes and thinly slice the cabbage. Preheat the oven to 425F.
- 2Pat the fish dry, season both sides with salt and pepper, and wash the board, knife, and hands with soap and water before touching anything else.
- 3Toss the potatoes with olive oil, salt, and pepper. Roast for 20-25 minutes, until golden and fork-tender.
- 4Place the fish on the baking sheet with the potatoes and bake for 10-12 minutes, until it flakes easily and the thickest part reads 145F (63C).
- 5Warm the tortillas in a dry skillet over medium heat for 30-60 seconds per side. Break the fish into pieces and fill the tortillas with fish, potatoes, cabbage, and salsa.
