Microwave Chicken Parmesan Pasta

- boneless skinless chicken breastcut into bite-size pieces1 1/4 lb
- whole-wheat pasta10 oz
- frozen green peas2 cup
- parmesangrated2 oz
- lemon juice4 tsp
- italian seasoning1 tsp
- kosher salt1/2 tsp
- black pepper1/4 tsp
Instructions
- 1Cut the chicken breast into bite-size pieces. Do not rinse the chicken. Season it with the salt, pepper, and Italian seasoning. Wash the board, knife, and hands with soap and water before touching anything else.
- 2Put the pasta in a large microwave-safe bowl and cover it generously with water. Microwave on high, stirring every 3-4 minutes, until the pasta is al dente, tender with a firm center; start tasting 2 minutes before the package time. Drain carefully.
- 3Return the pasta to the bowl and stir in the peas, lemon juice, and seasoned chicken. Cover loosely and microwave on high for 3-4 minutes, stir, then continue in 1-minute intervals until the chicken is opaque and the thickest piece reads 165°F (74°C) on an instant-read thermometer.
- 4Stir in the parmesan and let the bowl stand for 1-2 minutes, until the cheese melts and the sauce lightly coats the pasta. Taste and adjust with salt, pepper, and lemon juice.
