  • sweet potatoespeeled and diced20 oz
  • baby spinach4 cup
  • diced tomatoes12 oz
  • canola oil8 tsp
  • paprika2 tsp
  • kosher salt1 tsp
  • black pepper1/4 tsp

Instructions

  1. 1Peel and dice the sweet potatoes. Do not rinse the chicken. Pat it dry, season with paprika, kosher salt and black pepper, then wash the board, knife and hands with soap and water before touching anything else.
  2. 2Heat the canola oil in an oven-safe skillet over medium-high heat. Sear the chicken for 3-4 minutes per side, until golden brown, then transfer it to a plate.
  3. 3Add the sweet potatoes and cook for 8-10 minutes, stirring, until browned and nearly fork-tender.
  4. 4Stir in the tomatoes and spinach, return the chicken to the skillet, and bake at 400F for 12-16 minutes, until the sweet potatoes are fork-tender and the thickest part of the chicken reads 165°F (74°C) on an instant-read thermometer.
