- boneless skinless chicken breastpatted dry1 1/4 lb
- russet potatocut into 1-inch cubes2 lb
- frozen spinachthawed and squeezed dry6 oz
- greek yogurt1 cup
- garlicminced1
- lemon juice4 tbsp
- olive oil4 tbsp
- paprika2 tsp
- kosher salt1 tsp
- black pepper1/2 tsp
Instructions
- 1Preheat the oven to 425F. Cut the potato into 1-inch cubes and mince the garlic. Pat the chicken breast dry. Do not rinse it. Season the chicken on all sides with kosher salt, black pepper, and paprika.
- 2Toss the potatoes with half of the olive oil, a pinch of kosher salt, and black pepper on a baking sheet. Roast for 20-25 minutes, turning once, until golden brown and fork-tender.
- 3While the potatoes roast, stir the Greek yogurt with the lemon juice, half of the minced garlic, a pinch of kosher salt, and black pepper. Set aside.
- 4Heat the remaining olive oil in an oven-safe skillet over medium heat. Add the chicken and sear for 3-4 minutes per side, until golden brown. Transfer the skillet to the oven and cook for 10-15 minutes, until the thickest part reads 165°F (74°C) on an instant-read thermometer. Move the chicken to a plate, then wash the board, knife, and your hands with soap and water before touching anything else.
- 5Return the skillet to medium-low heat. Add the remaining garlic and the spinach, season lightly with kosher salt, and stir for 2-3 minutes, until fragrant and hot. Taste and adjust with lemon juice, salt, and pepper.
- 6Slice the chicken and serve with the roasted potatoes, spinach, and yogurt sauce.
