- whole wheat pasta12 oz
- spinach6 cup
- diced tomatoes2 cup
- garlicminced4 clove
- extra-virgin olive oil4 tsp
- lemonjuiced1
- kosher salt1 tsp
- black pepper1/3 tsp
Instructions
- Mince the garlic. Cook the pasta in well-salted water until al dente, then drain and reserve a little cooking water.
- Pat the pork dry and season it with salt and pepper. Heat the oil in a skillet over medium heat and cook the pork 4-6 minutes per side, until the thickest part reads 145°F (63°C) on an instant-read thermometer. Transfer it to a clean plate and rest at least 3 minutes. Wash the board, knife, and your hands with soap and water before touching anything else.
- Cook the garlic for 30-60 seconds until fragrant. Add the tomatoes and spinach and cook 2-3 minutes until the spinach wilts and the tomatoes are hot. Toss in the pasta and lemon juice, adding cooking water as needed for a glossy sauce. Slice the pork and serve over the pasta.
