- pork tenderloinpatted dry1 1/4 lb
- sweet potatopeeled and cut into wedges1 1/4 lb
- couscous1 1/4 cup
- low-sodium chicken broth1 1/4 cup
- italian seasoning1 tsp
- canola oil4 tsp
- kosher salt1 tsp
- black pepper1/2 tsp
Instructions
- Peel and cut the sweet potato into wedges. Pat the pork dry, season it with salt, pepper, and Italian seasoning, and do not rinse it.
- Toss the sweet potato with half the oil and roast in the air fryer at 400F until browned and fork-tender, about 15-18 minutes. Taste for tenderness.
- Heat the remaining oil in an oven-safe skillet over medium-high heat. Sear the pork until browned, then transfer the skillet to a 400F oven and cook until the thickest part reaches 145°F (63°C). Let it rest at least 3 minutes before slicing, about 12-16 minutes total.
- Bring the broth to a simmer in a saucepan. Stir in the couscous, cover, remove from heat, and let stand until tender, about 5 minutes. Fluff and taste for seasoning.
- Serve the sliced pork with the couscous and sweet potato.
