  • whole-wheat spaghetti.null18 oz
  • tomato sauce.null3 cup
  • onionfinely diced1
  • garlicminced4 clove
  • fresh spinach.null6 oz
  • parmesan cheesegrated2 oz
  • cooking oil.null4 tbsp
  • dried rosemary.null1/2 tsp
  • kosher salt.null1 tsp
  • black pepper.null1/2 tsp

Instructions

  1. Finely dice the onion and mince the garlic. Pat the ground beef dry, do not rinse it, and season it with kosher salt and black pepper.
  2. Bring a pot of water to a boil, salt the water well, and cook the spaghetti until al dente, tender with a firm center. Start tasting two minutes before the package time, then drain it.
  3. Heat the cooking oil in a large skillet over medium heat. Add the onion and a pinch of salt, then cook until translucent and softened, about 4-5 minutes. Add the garlic and rosemary, stirring until fragrant, about 30-60 seconds.
  4. Add the seasoned ground beef and break it into small pieces. Cook until deeply browned and it reaches 160°F (71°C), about 6-8 minutes. Wash the board, knife, and hands with soap and water before touching anything else.
  5. Stir in the tomato sauce and simmer until slightly reduced and glossy, about 5-7 minutes. Add the spinach and cook until wilted, about 1-2 minutes. Taste and adjust the salt and black pepper.
  6. Toss the drained spaghetti with the sauce, then finish with the parmesan and serve when the pasta is coated and the cheese is melted.
