- long-grain white rice1 cup
- cooked chicken breastshredded10 oz
- egg4
- salsa12 tbsp
- green onionthinly sliced1
- canola oil4 tsp
- kosher salt1/2 tsp
- black pepper1/4 tsp
Instructions
- 1Rinse the long-grain white rice. Simmer it in salted water according to the package directions until tender and the grains are separate; taste for tenderness before draining if needed.
- 2Pat the cooked chicken breast dry if needed, season it with kosher salt and black pepper, and warm it with the salsa over medium-low heat for 3-4 minutes, until steaming hot and the reheated chicken reaches 165°F (74°C).
- 3Heat the canola oil in a skillet over medium heat. Crack in the egg and cook, turning once, until the white is set and the yolk reaches 160F (71C).
- 4Spoon the rice into a bowl, top with the salsa chicken and egg, and finish with the green onion.
