  • green cabbagethinly sliced16 oz
  • salsa verde.8 tbsp
  • avocadothinly sliced2
  • jalapeñothinly sliced1 oz
  • cilantrochopped4 tbsp
  • limejuiced1
  • cumin.1/2 tsp
  • garlic powder.1/2 tsp
  • canola oil.4 tsp
  • kosher salt.1 tsp
  • black pepper.1/2 tsp

Instructions

  1. Thinly slice the cabbage and jalapeño, chop the cilantro, slice the avocado, and juice the lime.
  2. Do not rinse the ground beef. Pat it dry, then season it with the cumin, garlic powder, half the salt, and the pepper. Wash the board, knife, and your hands with soap and water before touching anything else.
  3. Heat the oil in a large skillet over medium-high heat. Add the cabbage and jalapeño, season with the remaining salt, and cook for 4-6 minutes, stirring, until the cabbage is tender-crisp and lightly browned.
  4. Push the vegetables aside, add the beef, and cook for 6-8 minutes, breaking it apart, until browned and the thickest pieces reach 160F (71C). Wash the board, knife, and your hands with soap and water before touching anything else.
  5. Warm the tortillas in a dry skillet over medium heat for 30-60 seconds per side, until flexible and lightly toasted.
  6. Fill the tortillas with the beef and cabbage mixture. Top with salsa verde, avocado, cilantro, and lime juice, then taste and adjust the seasoning.
