- shrimppeeled and deveined24 oz
- white rice2 cup
- black beansdrained and rinsed2 can
- frozen corn8 oz
- frozen spinach6 oz
- red oniondiced1/2 lb
- salsa verde8 oz
- corn tortillastorn into pieces12 slice
- avocadodiced2
- limehalved2
- olive oil2 tbsp
- kosher salt1 tsp
- black pepper1/2 tsp
Instructions
- Dice the red onion, tear the corn tortillas into pieces, dice the avocado and halve the lime. Rinse the rice until the water runs mostly clear.
- Combine the rice with the package-recommended amount of water in a saucepan, bring it to a boil, cover, reduce to low and cook until tender and the water is absorbed, about 15-20 minutes. Remove from the heat and let it stand covered until fluffy.
- Heat the olive oil in a large oven-safe skillet over medium heat until shimmering. Add the red onion, frozen corn and frozen spinach, season with kosher salt and black pepper, and cook for 4-6 minutes, until the onion is softened and the vegetables are hot.
- Stir in the black beans, cooked rice and salsa verde. Fold in the tortilla pieces, then spread the mixture evenly in the skillet. Arrange the shrimp over the top and season them with kosher salt and black pepper.
- Bake at 425F for 8-12 minutes, until the shrimp are pearly and opaque and curled into a C, and the tortilla edges are lightly crisp. Do not use any liquid that contacted the raw shrimp as a sauce.
- Top with the avocado and squeeze lime over the skillet. Taste and adjust with kosher salt and black pepper before serving.
