- black pepper:null1/2 tsp
Instructions
- 1Dice the bell pepper and red onion; halve the potatoes and slice the chicken sausage. Heat the oven to 425F.
- 2Pat the sausage dry if needed, then season it with a pinch of kosher salt and black pepper. Toss the potatoes, broccoli, bell pepper, and onion with olive oil, salt, and pepper on a sheet pan. Arrange the potatoes cut-side down and roast for 20-25 minutes, until the potatoes are fork-tender and the vegetables are browned and crisp-tender.
- 3Add the sliced sausage to the sheet pan and roast for 8-10 minutes, turning once, until browned and heated through; because this is poultry, the center must read 165°F (74°C) on an instant-read thermometer.
- 4Split the potatoes and top them with the sausage and vegetables. Sprinkle with cheddar cheese and return the pan to the oven for 2-3 minutes, until the cheese is melted and bubbling. Taste and adjust with salt and black pepper before serving.
