- feta cheesecrumbled2 oz
- italian seasoning1/2 tsp
- extra-virgin olive oil4 tsp
- kosher salt1 tsp
- black pepper1/2 tsp
Instructions
- 1Rinse the rice and roughly chop the spinach. Beat the eggs with the Italian seasoning, salt, and pepper.
- 2Cook the rice in a small saucepan according to the package directions until tender and the water is absorbed.
- 3Heat the oil in a small nonstick skillet over medium heat. Add the spinach and cooked rice, season lightly, and stir for 2-3 minutes until the spinach is wilted and the mixture is hot.
- 4Pour in the eggs, reduce the heat to low, cover, and cook for 6-8 minutes until the center is set and the egg mixture reaches 160F (71C).
- 5Top with feta, rest briefly, and serve when the surface is firm and lightly puffed.
