  • garlic, minced2 tsp
  • balsamic vinegar4 tbsp
  • beef broth1 cup
  • smoked paprika1 tsp
  • salt & black pepper1/2 tsp
  • cauliflower rice16 oz
  • canola oil2 tsp

Instructions

  1. 1Season the pork with smoked paprika, salt, and black pepper.
  2. 2Add the onion, mushrooms, garlic, balsamic vinegar, and broth to a slow cooker. Place the pork on top and drizzle with the oil.
  3. 3Cover and cook on low until the pork is very tender and easily pulls apart, about six hours.
  4. 4Shred the pork in the slow cooker and stir it into the cooking juices.
  5. 5Heat the cauliflower rice according to its package directions, then serve the shredded pork and vegetables over it.
