  • long-grain white rice1 1/3 cup
  • canola oil2 tsp
  • ground cumin2 tsp
  • chili powder2 tsp
  • smoked paprika1 tsp
  • limejuiced1
  • salt1 tsp
  • black pepper1/2 tsp

Instructions

  1. Do not rinse the chicken. Pat it dry, then season both sides with the salt and black pepper. Wash the board, knife and your hands with soap and water before touching anything else.
  2. Dice the zucchini, onion and bell pepper, and mince the garlic.
  3. Add the canola oil to the slow cooker. Arrange the chicken in the cooker, then add the onion, bell pepper, garlic, cumin, chili powder and smoked paprika. Spoon the crushed tomatoes over the top.
  4. Cover and cook on low for 4-5 hours, until the chicken is tender and the thickest part reads 165°F (74°C) on an instant-read thermometer.
  5. Transfer the chicken to a clean plate. Stir the chickpeas and zucchini into the slow cooker, cover and cook on low for 20-30 minutes, until the zucchini is crisp-tender and the sauce is bubbling. Taste and adjust with salt and lime juice.
  6. While the vegetables finish, cook the rice on the stovetop according to the package directions. Salt the cooking water well, then simmer until the grains are tender and the liquid is absorbed.
  7. Slice or shred the chicken and return it to the slow cooker. Stir to coat it in the sauce, then serve over the rice.
