Instructions

  1. 1Thinly slice the onion and bell pepper, and mince the garlic. Pat the pork dry and do not rinse it. Season all sides with the kosher salt, black pepper, smoked paprika, cumin, and oregano. Wash the board, knife, and your hands with soap and water before touching anything else.
  2. 2Heat the canola oil in a deep skillet over medium-high heat until shimmering. Sear the pork until browned on all sides, about 2-3 minutes per side, then remove it to a plate.
  3. 3Add the onion and bell pepper to the skillet with a small pinch of salt. Cook until softened and lightly browned, about 4-5 minutes. Add the garlic and cook until fragrant, about 30-60 seconds.
  4. 4Stir in the diced tomatoes and salsa verde, scraping up browned bits. Return the pork to the skillet, cover, reduce the heat to low, and simmer until the pork is fork-tender, about 25-30 minutes; the thickest part must read 145°F (63°C) on an instant-read thermometer, then let it rest at least 3 minutes before slicing or shredding.
  5. 5While the pork cooks, warm the black beans and frozen corn in a separate skillet over medium heat until hot and the corn is tender, about 5-7 minutes; taste and adjust with salt.
  6. 6Warm the corn tortillas in a dry skillet over medium heat until pliable, about 20-30 seconds per side. Shred or slice the rested pork, fill the tortillas with pork, beans, corn, and vegetables, and serve with the remaining skillet sauce.
