  • chicken breastpatted dry24 oz
  • lentils1 1/4 cup
  • diced tomatoes2 cup
  • frozen spinachthawed and squeezed dry8 oz
  • yellow oniondiced1/2
  • garlicminced2 clove
  • low-sodium chicken broth3 cup
  • shredded cheddar cheese4 oz
  • canola oil4 tsp
  • smoked paprika2 tsp
  • red pepper flakes1/2 tsp
  • kosher salt1 tsp
  • black pepper1/2 tsp

Instructions

  1. Dice the yellow onion and mince the garlic. Do not rinse the chicken. Pat it dry, then season all sides with the kosher salt, black pepper and smoked paprika.
  2. Heat the canola oil in a large oven-safe skillet over medium-high heat. Sear the chicken for 3-4 minutes per side, until golden and it releases from the skillet, then transfer it to a plate. Wash the board, knife and your hands with soap and water before touching anything else.
  3. Add the onion to the skillet, season lightly with salt, and cook for 4-5 minutes until translucent and softened. Add the garlic and red pepper flakes, stirring for 30-60 seconds until fragrant.
  4. Stir in the lentils, diced tomatoes, chicken broth and spinach. Bring to a simmer, then cover and simmer on the stovetop for 18-22 minutes, until the lentils are tender and the mixture has thickened.
  5. Nestle the chicken into the lentil mixture and scatter the cheddar cheese over the top. Transfer the skillet to a 400F oven and bake for 12-16 minutes, until the cheese is melted and the thickest part of the chicken reads 165°F (74°C).
  6. Let the skillet stand for 3-5 minutes, until the lentil mixture settles and the cheese remains melted. Taste and adjust with salt and pepper before serving.
