- boneless skinless chicken breast, sliced1 1/2 lb
- cooked brown rice4 cup
- canned black beans, rinsed1 1/3 can
- corn1 1/3
- mushrooms, sliced8 oz
- tomato, diced3/4 lb
- jalapeño1/8 lb
- canned chipotle peppers in adobo1/3 can
- shredded monterey jack cheese3 oz
- garlic1
- cooking oil4 tsp
- ground cumin2 tsp
- salt1 tsp
Instructions
- 1Warm the oil in a large skillet over medium-high heat. Add the mushrooms and cook until browned and their moisture has evaporated.
- 2Add the chicken, garlic, jalapeño, cumin, and a small amount of chopped chipotle pepper with adobo. Cook, stirring, until the chicken is fully cooked.
- 3Stir in the black beans and corn and heat until warmed through. Fold in the diced tomato just before removing the skillet from the heat so it stays fresh.
- 4Warm the brown rice according to its package directions, then divide it between bowls.
- 5Top the rice with the chicken mixture and Monterey Jack. Add another small spoonful of chipotle adobo if more smoky heat is desired.
