  • tomato, diced3/4 lb
  • jalapeño1/8 lb
  • canned chipotle peppers in adobo1/3 can
  • shredded monterey jack cheese3 oz
  • garlic1
  • cooking oil4 tsp
  • ground cumin2 tsp
  • salt1 tsp

Instructions

  1. 1Warm the oil in a large skillet over medium-high heat. Add the mushrooms and cook until browned and their moisture has evaporated.
  2. 2Add the chicken, garlic, jalapeño, cumin, and a small amount of chopped chipotle pepper with adobo. Cook, stirring, until the chicken is fully cooked.
  3. 3Stir in the black beans and corn and heat until warmed through. Fold in the diced tomato just before removing the skillet from the heat so it stays fresh.
  4. 4Warm the brown rice according to its package directions, then divide it between bowls.
  5. 5Top the rice with the chicken mixture and Monterey Jack. Add another small spoonful of chipotle adobo if more smoky heat is desired.
