  • reduced-sodium soy sauce/4 tbsp
  • cooking oil/4 tsp
  • kosher salt/1 tsp
  • black pepper/1/2 tsp

Instructions

  1. 1Rinse the rice and cook it on the stovetop according to the package directions until tender and the grains are distinct.
  2. 2Do not rinse the chicken. Pat it dry, then season it with salt and pepper. Wash the board, knife, and hands with soap and water before touching anything else.
  3. 3Heat the oil in a skillet over medium-high heat. Cook the chicken for 5-7 minutes, stirring, until browned and the thickest pieces reach 165°F (74°C) on an instant-read thermometer.
  4. 4Add the mushrooms, zucchini, and garlic. Cook for 4-5 minutes, stirring, until the mushrooms are golden and the zucchini is crisp-tender.
  5. 5Add the soy sauce and toss for 1-2 minutes until the sauce is reduced and coats the chicken and vegetables. Taste and adjust seasoning, then serve over the rice.
