- chicken breast1 1/2 lb
- long-grain white rice1 1/4 cup
- canned diced tomatoes (no-salt-added)2 can
- yellow onion, diced3/8 lb
- baby spinach4 oz
- dried oregano1 tsp
- black pepper1/2 tsp
- salt & pepper1/2 tsp
Instructions
- 1Rinse the rice and cook it according to the package directions, then keep it covered.
- 2Cut the chicken into bite-size pieces and season with oregano, salt, and pepper.
- 3Cook the chicken in a large nonstick skillet over medium-high heat until browned and cooked through. Transfer it to a plate.
- 4Add the onion to the same skillet with a splash of water and cook until softened.
- 5Stir in the diced tomatoes and spinach, scraping up any browned bits. Cook until the spinach wilts and the sauce is hot.
- 6Return the chicken to the skillet and simmer briefly so the flavors combine.
- 7Serve the chicken and tomato mixture over the rice.
