Instructions
- 1Cook the brown rice according to the package directions.
- 2Warm the oil in a pot and cook the onion until softened.
- 3Add the turkey and cook, breaking it apart as it cooks, until the thickest part reads 165°F (74°C) on an instant-read thermometer.
- 4Stir in the garlic, chili powder, and cumin and cook briefly.
- 5Add the beans, tomatoes, and corn. Simmer until thick and flavorful.
