- pinto beans1 can
- enchilada sauce8 oz
- bell pepper, diced2
- yellow onion, diced1/2 cup
- frozen corn1 cup
- shredded mozzarella3 oz
- taco seasoning1 oz
- low-sodium chicken broth1 cup
Instructions
- 1Rinse the brown rice and combine it with the chicken broth in a covered skillet or saucepan. Simmer until tender, then set aside.
- 2Brown the ground turkey in a large skillet over medium heat, breaking it into small pieces. Drain excess fat if needed.
- 3Add the onion and bell pepper and cook until softened. Stir in the taco seasoning, corn, pinto beans, and enchilada sauce.
- 4Fold in the cooked rice and simmer until everything is hot and the sauce lightly coats the mixture.
- 5Top with mozzarella, cover briefly, and let it melt before serving.
